A simple side or main, that will enhance your meal. It is all about mastering the sauté method. The result should be a dish with a delicious, smoky flavor.
¼ cup vegetable oil
500 g small, new or waxy potatoes (avoid starchy ones), precooked and sliced in half
500 g mushrooms, clean and sliced in half
300 g green beans (I prefer the thin ones), trimmed – or fresh green asparagus when it is season!
sea salt
freshly ground black pepper
Optional: Any herb of your preference (parsley, sage, rosmary, estragon, thyme, etc.), leaves finely chopped.
Preheat a large skillet, add oil. Add mushrooms and season with salt and pepper to taste. Sauté over high heat for 3 min.
Add precooked potatoes and green beans.
Also sauté them over high heat, stirring occasionally, until potatoes are golden brown. Correct the seasoning.
Optional: Add herbs, stir, and sauté for one more minute.
Serve immediately as side or main dish.

Just up my street and as you say the perfect accompanyment for beef but I would also serve with most robust main dish. J-P
