Pizza Bread

The popular and much-loved pizza showcased in an unconventional look.  Same ingredients, same flavors! Just follow these easy steps; you will be impressed with the result.

800 g ready-made pizza dough, cut into pieces (3×3 cm)

¼ cup olive oil

1 cup mozzarella, shredded

12 cherry tomatoes, halves

1 cup parmesan cheese, grated

2 tablespoons oregano (preferably fresh)

salt, black pepper, garlic powder

1 bell pepper, seeded, peeled and chopped

2 tablespoons fresh basil leaves to garnish

1 loaf pan 23×13 cm (2 L) or a bundt pan

Optional:

  • Add 2 tablespoons chopped parsley.
  • Add 2-3 tablespoons basil pesto for an extra kick.
  • Use any pizza topping of your preference: olives, salami, anchovies, artichoke hearts, onions, mushrooms, etc.  Just consider that the cooking time then might vary.

Preheat oven: 200°C or 400°F

Place all pieces of dough in a bowl and add olive oil, tossing gently to evenly coat. This should prevent dough from sticking together. Mix all ingredients, except basil. Distribute ingredients evenly; use your hands if needed.

Place mix into baking pan. Press it down until compact and flattened.

Bake at 200°C/400°F for 50-55 min, then increase the oven heat to 230°C/445°F, and bake for additional 5-8 min to obtain a golden-brown crust.

Note:  I have also baked the pizza bread in the Big Green Egg, and it turned out perfect!

While the pizza bread is still hot, flip it onto a serving plate.

Garnish with fresh basil leaves.   Serve immediately.

Enjoy it plain as a snack or as a meal with salad.
