Most people find apples delicious. Another good thing about them is that they are among the top ten foods that provide a great deal of health benefits. This is a simple way of preparing a scrumptious, fruity tart. You will not like any other after trying this one …
1 ready made rolled tart/pie dough or puff pastry for one 10-inch (25-cm) round baking tray
5-6 tart apples (like Granny Smith or Braeburn)* (approx.. 2 pounds = 1 kg)
250 g mascarpone
1 teaspoon vanilla extract
2 eggs
4 tablespoons sugar
*You can prepare this tart with other fruit, preferably those with a taste on the acid side: apricot, rhubarb, sour cherry, prune plum (see my Homemade Prune Plum Tart), etc.
Preheat oven: 210°C (410°F)
Roll out crust and press it into a pie baking dish of your preference. Prick dough with a fork.
Peel and slice apples. Lay apple slices a bit overlapping in the prepared baking dish.
Optional: If fruit is not too sweet, sprinkle a bit of extra sugar over it.
For the custard: Blend mascarpone, vanilla extract, eggs, and sugar until well mixed together. Pour the mix evenly over fruit.
Bake for 35-40 min in the lowest level of the oven until custard had set and is golden brown.
Serve warm or at room temperature.
Keep tart at room temperature the day you bake it. Wrap and refrigerate leftovers … if any! My son prefers it after it has been cooled in the fridge!
